    I have made these three now and both times they were a hit! The 3rd time I made them, my sister in-law practically begged me to make them when she saw the mascarpone cheese in the fridge! The first time I made them just as the recipe directed. The 2nd time I used dried pineapple instead of fresh. And the 3rd time, I used cherry yogurt and mango pieces instead of the pineapple. It was amazing!!

    I loved these. They are light and delicately flavored. This is NOT a heavy dessert. A word of caution though - you need to keep the filling and the baked cups separate until right before serving or the phyllo cups will become soggy. Both can be made well ahead and assembled immediately before serving.

    This was my first venture into phyllo dough - it dries out quickly so keep unused covered with a moist towel. I wanted a lower calorie version so my proportions were 1/4 c mascarpone, 1/4 c non fat plain yogurt, 1/4 c sugar free raspberry preserves, 1/4 c crushed pineapple.

    I enjoyed experimenting with the phyllo and will look for other uses now. Also, this recipe should lend itself well to lots of variations!

    I used store bought phyllo cups, strawberry yogurt and a tablespoon of sugar in my mixture. It was awesome and creamy. My family loves them.

    I added honey and that gave it a slightly sweeter taste. Love the filling but had trouble with the cups. I was not sure if I was suppose to keep them moist with water or butter, at any rate it was like eating cooked paper, maybe that was the way they were suppose to be. I'll keep trying as they were still good. Gave a 5 cause I figure I did something wrong.

    I made this for the second time today for a bridal shower tomorrow. Last time, although good, I thought that the rasberry yogurt was overpowered by the pineapple and just not enough. This time I made a fresh rasberry puree, omitted the pineapple and added fresh rasberrys and folded in a small amount of whipped cream. I opted for white chocolate curls and I have to say it is wonderful. I'm not going to bake the phyllo cups till morning for fear that they will sog up and the crunch of the shell is half of it. I think you need the contrasting textures to make it work. I'm happy with it and hope our guests will be too. I also think you could swap out the fruits for whatever you like. I will definately make this again and recommend that you try it too.

    I made this for thanks giving and everybody loved it because it is small and cute and it taste soooooo good ! The mascarpone cheese is creamy and the pinneapple gives it a freshness, it is not really sweet but I've added some honey .
    really great recipe and really easy !

    OK, we tried the phyllo cups three times and they never even came out close to being a cup. They puffed up way too much and were impossible to fill. However, the filling was good. Maybe a little less raspberry or more mascarpone cheese would make it better.

    This was delicious. I waited until time to serve to fill the phyllo cups. It was soooooo good. I think you could use the basic recipe and change the yogart flavors and it be equally as good. Great recipe. Light for summer.

    It looks so good but when I made it, it was really runny, it wasn't a thick mixture like the picture seems, and it jut tasted like rasberry yogurt with pineapple. The cheese didn't make it creamier or add a flavor.. maybe I did it wrong but at any rate it was a disappointment :(
