The kale worked great. Honestly the I feel the Marscapone was sort of wasted. It adds a lot of calories and cost... but wasn't a game changer flavor wise.

Outstanding recipe! I added the minced garlic to the onions instead of the water to get a more robust garlic flavor with the kale. Also used yukon gold potatoes, and doubled the kale. My entire family loved and even loved the kale!

The mashed potatoes came out so creamy and delicious. Boiling with cold water rather than warm water was definitely a smart choice. I made the potatoes and kale separate and then had two side dishes in case anyone didn't like the kale mixed in. I wish I could post a picture of my dish.

Very good. I eliminated quite a bit of salt from this recipe because Giada uses a lot of salt to me but it was still delicious

These were delectable, but if done by the book, they seem unnecessarily decadent to me.
Using gold potatoes (which already taste buttery, omitting all of the butter and the parmesan, and substituting light cream cheese for the mascarpone (because it's 1/4 the price, these still taste very creamy and delicious. Even without all of the butter, yum!

My family boxing day (day after Christmasdinner, which included three adult grandchildren
raved about it and the best compliment came from my grandson who
loudly stated "please make this again next year Gram"! It's definitely a five plus gives new meaning to mashed potatoes, thank you Giada, for another great recipe.
