    I would use basil and leave out the mint. I also would add grated romano cheese for flavor.

    I agree the mint was a little strange but I just replaced it with basil, added a little roasted garlic and wow - what a nice, light, easy and enjoyable appetizer. Be generous w/ salt and pepper.

    This recepie is so good an differen than others I made, but it needs little more flavor. I aded onions, more salt, oregano and lemon juice to the ricotta mix. Try adding sweet basil if you dont have oregano

    I love Giada's recipes, but this one was a real bummer. Pretty bland, even with more salt and pepper. I would not make this again. We didn't even eat it the first time.

    I love flavorful foods that can be "thrown" together for at a moments notice. The combination of colors and tastes on this Mediterranean Bruschetta is a perfect choice. Thanks

    really easy to make. like the texture of the ricotta/tomatoes/olives. one question, i printed off the recipe a month ago and it called for basil. today's online version calls for MINT???? i made mine with basil. Also used leftover mixture on bread for a turkey sandwich. Yum!

    Made this for a poolside get-together, and received sooo many compliments! As I tend to have all of these ingredients on hand on a weekly basis, this recipe is sure to become a staple!! Thank you, Giada, for another HIT!!!
