    We hadn't had farro before and will definitely make this recipe again. Filling and delicious! Love Giada's recipes!

    Substituted fresh tomatoes for the red pepper as they are at the peak of perfection right now. The salad was delicious - I loved the snap of the green beans.

    The first time I made this recipe I didn't have sherry vinegar so I used sherry wine instead. It was delicious but the next time I made the salad I used sherry vinegar as called for. I'm not a big fan of vinegar so it may be just me, but I think this salad tastes better with the wine and that is what I will use from now on. I also eliminated the green beans and added a lot more peppers - green and red. Either way you can't go wrong with this recipe. The farro salad is absolutely delicious.

    You can replace farro with wheat berry which is far more accessible than farro (yes, farro is available at Whole Foods, but not located in their bulk section; ask a clerk for its location. I've replaced sherry vinegar with red wine vinegar and it's been great! Other substitutes are chives with green onion, green beans with asparagus....this is very, very yummy!

    I've made this salad several times, always to rave reviews and requests for the recipe. If you live near a large metropolitan area, you can find farro rather easily. If you're like me, you have to order it on line. I would not use anything but farro for this recipe. You won't be disappointed with the taste - chewy, nutty and delicious. As other reviewers have said, this particular combination with the red pepper, green beans, olives and chunks of Parmesan is particularly intoxicating.

    This is such an amazing combination of flavors. The farro itself is chewy, then you have the soft olives and peppers (I used roasted red for an added flavor boost, and the green beans are so crisp after adding them to the ice bath. With the chunks of fresh parmesan along with the tangy dressing, this dish is such a winner!!!! Thanks, Giada!! :o

    I made the recipe tonight exactly as written, and this dish is wonderful! My husband oohed and ahhhed throughout the meal - I served it with marinated lamb kabobs - and insisted that in the future I forget about making pasta salad and stick with this flavorful, healthier side dish. Yes, farro is available at Whole Foods (I didn't have any luck finding it elsewhere, and worth the search. Yum!

    I made it today for the first time, and used Brown Rice instead of Farro, because I couldn't find it! Does anyone know where I can get it? It was quite delicious and I would strongly recommend it to anyone.

    This is the second time I've made Giada's farro salad. My husband and I love it. I didn't change anything in the recipe, except I used just a little less farro than called for. Delicious and easy!
