I was able to find farro at Dean & Deluca. However, at the last minute I noticed I did not have any sherry vinager so I used Red Wine Vinager. I'm not sure if this made a difference but, either way it was really good. I took it to a dinner party and everyone seemed impressed. I did not put in the cheese b/c our friends are vegan but, next time when it is just me I will.
This was fun to make and good to eat!

I was in Rome recently, and ate this salad at a restaurant near the Spanish Steps. This was my introduction to Farro.WOW....It was fabulous. They made a basic farro salad with baby tomatoes and garlic/olive oil/cilantro balsamic....I had to eat this again, and after ordering farro online I used your recipie. SO absolutely WONDERFUL the introduction of the beans and red pepper made it even better...my friends loved it as an appetizer. A+++++ for this recipie.

I was lucky enough to find farro at an Italian store nearby, and it was the first time I had ever eaten or seen it. But for those of you who can't find it, it reminded me a lot of barley in texture and taste, so you may want to try that. This was very good and I will make it again.

I made this one Sunday just for fun and was pleasantly suprised with this dish. The fresh veggies mixed with the grains and of course, my favorite part-the chunks of parmesan cheese- were a great combination of flavors and textures. Great summertime dish!!

I made this for a function at my son's school. Everyone asked me for the recipe. You can add to it or even take away. Instead of Farro I used Corzo. IT was excellent.

Wow, easy to make, it took a few places but found faro in an Italian Grocery near my home. Bought faro for all my "cooking friends" and printed the recipe and viola! I prepare it once a week and it gets better with every day.

I loved this because I have been known to be "grain-crazy". I have substituted brown rice because couldn't find farro. Olive oil is very important in this and cheese makes it all oh so good:
Goes good with Pinot Grigio
