    I could not find farro, so i used brown rice. AMAZING. so light and healthy and so so good! The first time i made this i followed the recipe but now i've made it my own by adding all different veggies and changing the dressing! I love this!

    This salad is amazing! I have made it numerous times. The only thing I do differently is to cook the farro
    (spelt in vegetable stock. This is my favorite thing to take to work for lunch...healthy, satisfying and delicious!!!!

    Had to purchase the Farro online.
    Hope there's enought interest to eventually purchase retail. I love the taste and health attributes of this grain.
    The recipe is outstanding, as are all of Giada's. Very flavorful.

    I found farro at an italian deli/grocery store. It is not the same thing as spelt (aparently spelt gets mushy when cooked. This was firm with a nice bite to it. We loved the salad and could use it with all different types of raw, sliced veggies. It's served at room temperature, so it is a great party dish. Now I'm eating it leftover for lunch straight out of the fridge the next day and it really holds up beautifully.

    This would be better with a different grain. The Farro was not found in any store it has to be ordered on line. When looking up farro I found it could be compared to spelt so I used spelt was not a good taste. I went to a regular grocer and then to a health food store.

    I really liked this receipe. I could not find the Farro and as suggested used brown rice instead. I will try this again with the Farro once I can locate it. It is very favorful and all the ingredients work well together. Giada, as always, delivers such great ideas!

    I was given farro as a culinary gift from a wine club and was waiting for a perfect recipe in which to use it. It was wonderfully flavorful and my husband could not stop raving about it. There is not one thing I would change about it. Giada stated that brown rice could be used if one is having a hard time finding Farro but I believe Whole Foods market carries it and also some of the other upscale markets or perhaps ask your Italian deli. I do not think local markets carry it. I was glad to have enough left over for my lunch. (We halved the recipe for two.
