Thwse was absolutely delicious! I made this for my family tonight and everyone ate so many, it turned into dinner! Wouldn't change a thing!

Delicious! I made this tonight after seeing Giada's show this morning. It turned out excellent. Even my eleven year old son, whom can be a fussy eater at times, loved it! I followed the recipe to a tee, sans the fresh basil leaf on top as well as added two cloves of garlic instead of the one. I served it over a field green salad, lightly drizzled with a basil vinaigrette.
As a vegetarian, I am always so happy to discover new recipes and appreciate when the star chefs make the occasional vegetarian dish. This was superb! I will definitely make again.

I made this eggplant yesterday and thought it was great. Followed the recipe except I used a regular sized eggplant instead of mini eggplant. Very good flavor and will use this recipe again.

I served this as an appetizer to a group of friends at my New Year's Day Luncheon. It was a big hit, and I was asked for the recipe twice.
This is very simple to prepare, especially that you can prepare most of it well ahead.
The Panko bread crumbs should not be substituted, they give this dish the best texture.
I'm going to convert this to a regular eggplant parmesan soon! Delicious. Thanks Giada!

This is fantastic!! Lots of great flavors coming together. I made this as a main dish and added a salad. Makes a great holiday appetizer. Very simple recipe and easy to follow. This italian family thanks you for adding something new recipe collection.

I had a bad experience with egg plant, so I was unsure if my family would like this, but it was SO GOOD, they can't wait to make again!
