    These little frittatas are easy and delicious! We'll be having them later as part of our Christmas brunch. I'll substitute some chopped sauteed pancetta for the ham. They can be made ahead and reheated in the oven, making them a quick, portable, high-protein breakfast.

    Great for a brunch or potluck party. I have made these twice. Once as Giada's recipe lists and once with ham and a mixed colby jack cheese blend. Both times they were outstanding. These are really excellent and super simple to prepare! The only downside is that when they are in the oven they look amazingly puffed and fancy but once you take them out they get deflated. I wonder how you can keep the puffiness.... I'll keep trying/researching!

    i made these for a party a few years ago....did some with asparagus and some with crawfish and green onions...they were a HUGE hit...to those asking how to reheat, i made them a couple of days ahead and kept them in a ziplock bag in the fridge...reheated in a single layer on a sheet pan in the oven...you never would know they weren't freshly baked.....wonderful party appetizer, planning to do them for our Dirty Santa gift exchange this year =

    Based on the number of positive reviews, I wonder if I did something wrong....I thought the mini frittatas tasted pretty bland, and on top of that, only made half the number the recipe indicated.

    My family absolutely loves these! The first time I made them, I had to end up
    making two batches, the first one went so quick! They are so simple to make and the taste is great. The only thing I changed was using colby cheese instead of parmesan, and I added a bit more cheese than the recipe called for.
    A great bite size snack for kids to eat on the way to the bus, and great for you to grab a couple on your way to work. A quick easy healthy breakfast!
    However, they are also good for just snacking. Can't imagine a time when they wouldn't be ok to munch on! :

    This is one dish I won't mind making for years to come!

    I'm catering my dear friend's memorial reception who recently passed away. I'm doing an afternoon tea and these little darlings will be served alongside the tea sandwiches. I've made them a few times before and they're absolutely wonderful and very easy to make. I didn't change a thing - there wasn't a need to!

    YUM but I totally changed it by adding
    3 thick slices of bacon crumbled
    1 cup yukon golds (cooked in oil
    1 cup cheddar cheese

    These are so cute! and they taste great! Mine actually looked like little popovers. I'm guessing that was because I cut the recipe in half and filled the empty mini muffin tins with water so it was like the were in a steam bath.
