Made these for my kid's teachers for lunch and snuck a couple after they cooled. Absolutely delicious! The flavors just burst in your mouth. Only thing was, the recipe only made about 17 mini frittatas, not 40. The possibilities are endless in this recipe. Will try different meats and cheeses and even a veggie only one.

I made these for my husband's potluck at work, they all loved them! they kept asking my husband for the recipe and he kept saying that it was my recipe not his. Well not mine, not his but is delicious!

I made these for breakfast the day before yesterday. My boyfriend who is not a huge eggs fan loved them! He said they were like mini omelets lol I changed up the recipe a little, instead of using Parmesan I used shredded cheddar cheese and instead of using the mini muffin tins I used a normal cupcake pan (with 12 cups and just made 12 of them. So I had to leave them in the oven for a couple minutes longer to get them done but they really did turn out amazing! It kind of stuck to the pan a bit but not to awful bad.

Made this for brunch, did exactly as per recipe, but didn't have muffin tin so made it as one piece. It took about 15 min-20 min to bake. Really good.

I made these for my honey this morning for Valentine's Day brunch and they were a hit! I added chopped cooked asparagus and some diced roasted red peppers, and sprinkled chopped chives over them on the platter. Beautiful and tasty! I'm thinking swiss, bacon and mushrooms, topped with half a cherry tomato for Sunday's breakfast.

Giada - these are amazing - as is "no substitutions". But after 1/1, I "stole" you idea and used it to make egg white/veggie omlettes for my husband who has high cholesterol and does not get enough veggies. Subs include: cooking spray in the mini pan (or full size muffin pan, egg whiles (for half of recipe and sauteed veggies we love (we use zuchinni, peppers, asparagus, onion Delicioso! Gracie Giada!

I just made these for for my wife. I did change the recipte a little. I added cilantro and used sliced applewood smoked chicken instead of ham. This is now one of my favorite foods.
