Made these for Christmas brunch and they were a hit. Who doesn't like scrambled egg bites?

These are really good and super easy. I love that they cook so fast. Didn't have parm, but used cheddar. Very veristile recipe. Will be making again.

what a great idea! I am always looking for healthy breakfast items to make for my 7 year old and she loved these. I planned on storing the extras in the freezer, but between my husband and her gobbling them up within days I haven't had the chance. 30 seconds in the micro and they are perfectly reheated. And I can sneak in veggies (i used red peppers and leaks since they were available in my garden - everything is backwards in sw florida! which is always a plus.

Cooking them now….had to use regular muffin tin instead of mini's…only thing is they are puffing up very high, maybe I shouldn't fill them almost to the top when making regular size muffins? Did anyone else have this probe…they look more like large corn muffins with the center sinking a bit

Wow this was incredibly easy! I am a first time cooker; being a college student and just cooking for one I thought that I would give this one a try. I was amazed on how easy it was and how delicious. I had to change the recipe to suit me of course.. but the process of how it came together was perfect due to the original recipe. I added maple bacon instead of ham. Changed to 1/3 cup of milk with only 4 eggs and sprinkled in parsley and bacon and italian cheeses. It was delish!! It made only 4 frattitas. But that's all I wanted.... thanks Giada. This is now a breakfast favorite of mine and hope to show it off in the future!!!

I love eating eggs everyday for breakfast but sometimes dont feel like taking the effort to make them. This recipe was great! I used leftover bacon and chedder cheese and used a regular sized muffin pan. I had to cook them a little longer and they came out great! I microwaved the rest over the past few days and they still tasted great. This weekend I will try Chorizo and pepper jack cheese

This recipe is so simple yet so delicious!! My roommates and I had a very light dinner so as a post-dinner snack, I cut the recipe in half and made these mini frittatas and everyone loved them. I made mine with ham, green onions and rosemary. I was too lazy to grate some parmigiano so I substituted it with some of those pre-mixed cheddar/mozarella mixes from the grocery store. Still delicious. Mine came out slightly salty, but I think it was because my ham was salty to begin with so I should have omitted the extra table salt. Still delicious and will definitely become a staple in my apartment!
