I don't like to change recipes from the original but I did do three things:
In the Cupcakes: I used skim milk instead of whole milk, I think it would taste the same and it doesn't have the calories of the whole milk. Also, I could not find a 12 oz. can of Libby's, so I bought the smallest can, 15 oz. and used the whole thing. I had enough batter for 18 regular sized cupcakes.
In the frosting: I read the review saying it was really rich, so I made the frosting exact except, no cocoa powder. It tastes great with the cupcakes. Its not too sugary, its like a cream cheese frosting. Delicious!
I will definitely make these again for my office potluck!

Frosting was a little...actually really rich. Next time I am going to add the cocoa powder last and stop when I have the right taste.

Anybody know if you could use this recipe for a full sized 9x13 cake instead of cupcakes?
