    Awesome recipe. I love mushrooms and the risotto bursts w/ mushroom flavor --and smells delicious. I'm not too fond of peas so substituted canned corn instead -- still delicious. Can't wait to make risotto al salto in a few minutes!

    Great but could cut back on the onion. Also just go with the button mushrooms.

    I had family members from Europe visit me over the Thanksgiving holidays and this receipe was on the menu.....they loved it!! What a compliment since my uncle is a Professional Chef! This receipe was so easy to make..... Thank you Giada!

    Very enjoyable to make (if you like being in the kitchen. My first attempt at risotto and I loved everything about it. My family and I loved the mushroom flavor and texture. Great recipe. Don't leave out the peas. They are wonderful in this dish.

    I used oyster mushrooms and white button mushrooms and it was awesome. I'm definitely not intimidated about making risotto now and I intend to make this again. Kudos, Giada!

    This tasted very good. I really like mushrooms so this was great. I think for next time I'll substitute mushrooms for some kind of meat, just because my husband wont eat cooked mushrooms.

    Who knew Risotto could be so easy to make. My family devoured this dish. Save some for Risotto al salto the next day. Yummy.

    This is a fabulous recipe but took much longer than the time indicated. Lots of leftovers and I can't wait to make the rice balls that are made with them. Allow at least an hour and lots of stirring... normal with homemade risotto.

    This recipe is wonderful.. I have never eaten risotto, let alone made it.. it was very easy after I had all the ingredients prepared. I had to substite morel mushrooms for the porcini because the supermarket wqs out of them... I also didn't have enough chicken stock so I used some beef stock mixed together.. after adding the peas and cheese, the risotto was creamy and delicious.. I can't wait to eat it with hot crusty bread and a salad.. a must try for everyone
