The first time I tried this recipe, I did not have lemons, so I substituted oranges, and the muffins came out pretty good. The second time I made them, I tried a little something different... I omitted the lemon rind, lemon juice and extract, and instead, I chopped about 6-8 strawberries up. I substituted about a tablespoon of chopped strawberries for the lemon rind and beat that up with the butter and sugar. Then, after I added the dry ingredients, I stirred the remainder of the chopped strawberries into the mix. Other than those changes, I followed the recipe exactly. And this new version came out even better than the original! I think it would also work well with raspberries and blueberries. I love the ricotta cheese in these muffins, it gives them such a nice texture and flavor. If you enjoy muffins, you just HAVE to try this recipe with your favorite fruit.

These biscuits/muffins were super easy to make and came out perfect! The outside has a golden crunch and the inside is moist and delicious. I chose not to use muffin liners and instead greased the muffin tins. They popped right out with no mess! Love ya Giada!

Very tasty and just the right combination of lemon and almond flavors. The texture of these really are like a "biscuit", so don't be fooled by the fact that you put them in muffins cups that they will be light and fluffy like a cupcake. I tossed in about 1/2 cup of dried blueberries and they came out really yummy! Next time I'll try fresh blueberries.

Very good although a touch on dry side unless you eat them immediately. Nice light lemon/almond taste. I might add a little more lemon zest to punch it up a bit though. But all in all I would probably make it again in the future.

Incredibly easy to make. Has a flavor that just blossoms the more you eat and the longer it is in your mouth. A big hit in my house and will make again.
