    These are awesome! So delicious. I wasn't sure if they'd be more like a scone or a muffin or what...but they came out moist and full of flavor. Perfect with a cup of tea. I didn't use paper liners with mine either. The almonds add a nice crunch on top!

    These are amazing as-is!! For a little healthier version.......... delicious with pureed silken tofu (instead of the ricotta. I also use Earth Balance instead of butter, white whole wheat flour, substitute ground flax seed for some of the flour, and sometimes use it in place of the egg as well (1 tablespoon ground flax + 3 tablespoons water = 1 egg. I have also made these with vanilla extract and blueberries (instead of the almond extract. Fun to play around with and yummy! I think you could also cut back on the sugar a bit if you wanted to.

    Awesome muffins Giada! You've done it again....very light and tender muffins...YUM! I made exactly as recipe reads, but DID NOT use cupcake paper liners. (I never do, just lightly oil cupcake pan and it works perfectly for me.

    Quick and easy and worth making. I was expecting something more like a muffin, but they are more like a dense cake.
    Next time I make them I will probably use half as much sugar and add an egg and make more than 12 muffins; they were pretty dense, and a little on the sweet side. Or I might drop them on a cookie sheet and make them more like scones rather than muffins for a better portion size.
    I really liked the idea of adding strawberries (or other fruit that someone below mentioned. They could use some lightness/juiciness.

    These muffins are AMAZING!! They were easy to make, and taste GREAT! They are SUPER moist!!! I will definitely be making these again!!!

    These muffins were delicious and I made a glaze with powdered sugar and lemon juice and and spread it on top of the muffins. I also used vanilla flavoring and slivered almonds. So good, you have to make these if you are a lemon fan!
