This recipe is so surprisingly good. I am in love with these strawberries! I served dessert, then snuck away from my dinner party to eat more strawberries straight from the pan. Yum!
I substituted champagne vinegar, as I didn't have any white wine vinegar, and I will permanently change the recipe. I didn't bother making the topping, and I honestly don't think the recipe needs it. It doesn't make any sense that an omelet can be dessert, but Nonna Luna has converted me.

This recipe is awesome, especially when you are a gluten free eater. It reminded me of a sweet and savory crepe (minus the gluten. This a must try, don't change a thing the combinations were perfect! This is at the top of our breakfast/brunch menu list from now on.

All I can say is WOW,,, this was fantastic. The only thing I changed was I used Splenda to sub for the sugar as I have to watch my carb intake. The strawberry paired with the mint was sinfully good. I will be making this whenever I am craving something heavenly.
    Thanks Giada for sharing

Sunday my husband wanted pancakes, I saw Giada prepare this on Saturday. I Decided to try this as it looked delicious. On the show Giada's Aunt Raffi said, it was the best thing they made that day. Easy, Fast and TO DIE FOR !!!! My husband loved this and wants me to make it again next weekend. Followed recipe exactly, I wouldn't change a thing.

Our whole family really enjoyed this! We made if for brunch today - loved the mint and think I would add some lemon zest to the strawberries next time to freshen it up a bit. We did add the whipped cream - just a touch that melted over the omelet. My grandmother used to make me jam omelets as a young child. I loved the dressed up version. Lovely.

It was different and delicious! The combination of the fresh mint and strawberries, with a splash of vinegar was perfect. I served it with and without the whipped cream, both were equally scrumptious. This would work, as a breakfast entree, at a brunch, or even as a dessert. Definitely try this one!

My husband made this for me this morning. I saw the show yesterday and thought this was very different, but sounded good. It was delicious, and had a crepe like feel and taste. We did not have the mint so that's the only omission he made. He paired it with a Mimosa! I will definitely make this again and make it for a brunch or overnight guess.
