    This is the best soup i've ever made. It's ridiculously easy, but so so good. There are so few ingredients and I think that's what makes it so good! My boyfriend(who absolutley loves onion soup thought it was wonderful! The only thing i added was a little water to the beef broth because canned broth is a bit salty, and it came out great! Make this, it's a lot better than onion soup you get in restaurants!

    I made this for the first time tonight, and it was super easy and super tasty!!!! The only thing I would change, is maybe adding just a tad bit less oil.... I may have over measured, (which is possible, so just be careful with the measurement.....

    Usually something this flavorful is not so easy to make! I definitely had my doubts, with only 3 main ingredients (onions, broth, thyme and figured it would either be a bit bland or have that "canned broth" aftertaste. But I was very pleasantly surprised!

    I sauteed my onions longer than 10 minutes - I like mine softer, and simmered the soup quite a while because I was making Ellie Krieger's vegetable tart also.

    I realized as I was sauteeing the onions, I didn't have any fresh thyme. So I used dried thyme and rubbed it really well between my hands to release the oils - probably about 2 tablespoons. For bread, I used stale Seeduction bread (from Whole Foods and it was excellent!

    It makes more like 3 servings unless your servings are really small, like Giada's. :-

    My husband loved it. Wow! I am lactose intolerant. I used goat mozzarella instead of the fontina for myself. Delicious!

    I thought it was very easy to make (no great dish is ever easy. Although it had a nice flavor I didn't find it any more appealing than a regular old bowl of onion soup.

    This is such a simple and easy to make meal, but you will feel sophisticated eating it! We can't wait to make it for a winter dinner party with friends!
