Wonderful Giada! It deserves 10 stars. Almost as good as mine. LOL ;
My recipe is exactly the same with the additions of:
butter & olive oil combo for browning meat (& sauteeing veggies, garlic (2 cloves, dried porchini, chopped; 1 c chopped Roma Plum Tomatoes for texture & appearance; I add more wine than Giada (heightens the depth of all the flavors - tasting
as it 'develops'. My gremolata is the basically the same: I add garlic & a little more lemon zest, a little
less parsley.
With the stock: I do prefer using veal stock, but beef stock is just as good. The choice of stock can really intensify the depth of flavors in this wonderful dish!
I like serving this with Risotto Milanese (seasoned w/saffron, freshly grated cheese (on the side, Caesar
Salad, crusty Italian bread (for 'mopping', & a good
bottle of vino (my preference is red.

I made this for the guys at work and it was a hit. Working at a fire station cooking for the crew is a daunting task, they are very critical and cheap. I told them that the price was ten dollars (usually dinners are $3-4 range and they didn't bat an eye which is unusual at my fire dept. Many times that crew has asked that the next time I work with them that I make this dish. Easy and tastes great!!

This was a delicious recipe even though I made too much and only have 2 people in our household. Just a TIP: If you can't find veal shanks at your grocery store, tell the meat department and they'll order it for you. That's what I had to do. It took me a lot of effort to put this together but it came out perfect!

Simply put, this is a great dish.
Served it with couscous, and fingers were licked. I actually doubled the vegies quantities this time, and would quadruple it the next time + add a few more roots (parsnip etc..
Highly recommended.

I made this using beef shanks because I couldn't get veal shanks in my area. It turned out so yummy that I don't think it would be possible to be better using the veal. I will definitely make this again. My husband said it was a keeper.
