This is a terrific recipe that impresses company and turns out better for me than any restaurant.
I never wrap the herbs/bouque garni and it turns out just fine.

This was really delicious. It was a gourmet meal, yet fairly easy to make. I will definitely make this again and would recommend it to others.

It literally melts in your mouth - an expression I NEVER use -- but this osso bucco was the best thing I've ever cooked! My husband - who is very spoiled living in the gourmet capitol of Las Vegas - said it is now his favorite dish! I served it with linguine ..... Cannotwait to make it again.

I loved the gravy, but I had to cut the meat off the bone. I thought it would be more tender, although my husband disagrees. I would add more carrots and un-tie the meat if you don't think it is trimmed just right.

I used lamb shanks instead of veal. My husband loves lamb, anyway you cook it. I myself would prefer veal, but veal shanks are more expensive and sometimes hard to find when you want them. I live in an area with three major grocery stores within 3 miles of my house and it's still hard to find. Ask the meat department to order them for you. The recipe is not really difficult, unless maybe you are a beginner cook. The taste was sensational. I have another recipe for Osso Buco that I have used, but this one is better. Every recipe I have tried of Giada's is exceptional.

I'm not sure if it was the recipe or the actual fattiness of the veal shanks that the butcher gave me, but we were very disappointed. Family was over for company and we had to order a pizza and throw out the osso buco.

I used a slow cooker after browning the veal shanks. Oh so tender and tasty!
