    I used my own gluten free waffle recipe using quinoa flour & corn flour, but I took Giada's advice and added cinnamon and procuitto (I did not have pancetta. They were crisp and delicious. We used them like bread as a side the Baked Omlette recipe!!

    Mmmmmm!!!Made this for dinner tonight and it was a big hit. Hubby and 4 year old daughter were very happy. This was definitely a nice twist to the typical dinner.

    I have made this for my family several times. The waffles are hearty and filling and so, so, good. We love them. I cooked for a youth camp and made the waffle recipe, thinned it out with a little extra milk, added bacon instead of pancetta, and made pancakes. All the kids loved it and raved over these pancakes. This is one of my favorites.

    I made these with the omelet for dinner this evening and they tasted fantastic! I did use bacon instead of pancetta because I don't really care for it but the contrast between it and the cinnamon was terrific. It also forced me to buy a waffle iron which I think will get much more use now after seeing the ease of making my own waffles at home. Very tasty!

    These were AMAZING! Thank you Giada! Such a simple idea but soooo good! We made these for dinner and didn't wanna go to the store for Pancetta, so just used regular bacon that we had. So we just made our family waffle recipe & threw the cinnamon and bacon in and it was AWESOME! A definate new favorite for dinner & breakfast!

    This was the best waffle I have ever eaten the walnuts added a spectacular crunch and the cinnamon was amazing. I eat it at least once a week

    Very good recipe. The cinnamon flavor really comes through and the walnuts add a special crunchy touch. Great to make ahead and reheat in the oven or under the broiler.
