    I made this with bacon instead of pancetta and used a little extra bacon since it reduces a lot more than pancetta.I also substituted pecans for walnuts since that is what I had. They turned out great, my husband and I both loved them. I served them with a few slices of bacon on the side. The only thing, is we couldn't really taste the bacon. But still very good.

    Great taste and texture. It was great to start with the Belgian Waffle Mix and make it better with the pancetta, cinnamon, etc. We're a family of 3 so this recipe made enough for both Saturday and Sunday morning. Thanks Giada.

    I made this recipe out of Giada's book and couldn't believe I had made something so tasty. The recipe is easy and really delicious. I don't have a waffle iron, so I just used the recipe to make pancakes. They were really thick pancakes and had sooooo much flavor. I saved a few in the fridge and they were also delicious cold the next day. :

    My very first time making waffles. I decided to try out my waffle maker I got as a gift for Father's Day brunch with my husband.

    I've never tasted waffles with cinnamon before so I decided to try it. I followed the directions as just instructed minus the pancetta...I substituted it for bacon as many have. The waffles tasted yummy with an interesting cinnamon taste with bits of bacons in them. I added the waffles with raspberry and blueberries and poured maple syrup over it. With this I made Giatta's sausage kabobs and the two together was a great mixtures....something sweet with something savory/salty!

    I would try this recipe again but would try and mix things up a little next time, just for fun!

    I made these for a Christmas brunch and they were a hit. Very easy to make and was the favoriate by all! I have tried a lot of Giada's recipes and hers always come out great. I substituted bacon instead of pancetta but think either would be good.

    I substituted bacon instead of pancetta and these waffles were delicious. I love the combination of cinnamon, bacon and nuts. I tried them with hazelnuts too and I liked them even better!

    These were great! I made these and the baked omelet from this episode (also yummy for a "b'fast dinner party" and everyone loved them. The only thing is they must be served warm; mine got cold waiting for the meal to start and I had to warm them over. Next time I am gonna just sprinkle the pancetta over top with the walnuts as I couldn't quite taste them enough. I will also try them with bacon. Pancetta is expensive and I can never find it at my grocery store. Good recipe Giada!

    I made them for mother's day and they were a hit. I nice twist on a regular waffle. Great for a special occarion brunch or breakfast.

    I made this using bacon as pancetta is hit or miss in our markets. My husband and I thought this was good. I also made my waffles from scratch and added the bacon and cinnamon. My husband suggested we put a spin on it by adding green chilis, and omit the cinnamon, top with an egg and salsa. Basically a spin on Huevos Rancheros. So we are going to do that next time. Basically replacing the tortillla with a savory waffle.

    Anna - you absolutely can do this recipe with homemade waffle batter - I think Giada would approve. : The pre-made mix is really just for ease and simplicity. I've made this with homemade batter a few times, and it's every bit as good - if not better.
