I made this dish last night. It was simple and delicious. I was afraid it would be too salty with the pancetta so I waited until the end to taste it and add a little kosher salt. This is a definite make again!

My whole family loved this dish, only I didn't have the actual pancetta, I used regular bacon, and It was loved by all of us in the house.

First time making this. Followed other reviewers suggestion to leave the pancetta drippings in the pan. Very tasty.

I was able to make this gluten free so that's a big plus. It's good. Like chicken noodle soup rice.

I followed the recipe precisely. Has a bland taste and needs some kick. Any suggestions.

loved it, giada! so easy to prepare, so tasty. also have made it with bacon (pancetta isn't easy to find where we live, poured off the grease, and it was still wonderful. a quick and tasty way to dress up rice. keep the ideas coming!

Yummy, but better fresh than as leftovers.

I've made this recipe 3-4 times in the past 6 weeks...b/c this is one of my husbands favorites. I've cooked it both ways....with and without the pancetta grease remaining in pan. I love it both ways....if you have time, sure...remove it for a leaner meal. I like to splash in some nice white wine near the end,mix and add a little lemon zest as well. Then I add cooked chickpeas (that have boiled for hours in my crock pot and top it all off with a tiny bit of fresh mint. We love this meal and have entertained with it and people asked for seconds!! Thanks Giada!!
