    I didn't make the sandwiches---I served it as I would regular meatloaf. I did add a chopped onion as I think turkey can be a bit bland.

    This sandwich was very flavorful! I rarely choose to eat turkey, but thought that it was a lighter way to eat this dish. The arugula mayonnaise was a pleasant condiment with this sandwich. My husband loved it. Will definitely make this one again.

    I've made this recipe a few times, and even my poultry hating Dutch boyfriend who considers only fish and red meat edible, loved this meatloaf and the arugula spread.

    1 thing I did a little different was 3 min. before cooking was done, is to take out of oven and out of parchment. I then put it under the broiler to crisp the panchetta lightly.

    I made this a few weeks ago and the only complaint I have is that is was dry. How can I make my meatloaf more moist?

    I made this recipe substituting ground beef for turkey, and as another reviewer suggested roasted red peppers for the tomato. I also used italian breadcrumbs. This was very good. After 45 minutes, I removed the parchment paper and put it back in for 10 minutes to brown the top. It was a hit. I couldn't find arugula so I substituted baby spinach leaves in the mayo. I'll be making this routinely as it pleased all.

    I didn't serve this as a sandwich. I just served it sliced. Both my husband and daughter loved it. It was very moist and flavorful.

    After watching Giada make this recipe on the show I had to try it. It was absolutely THE BEST meatloaf I've ever had. I did not make the sandwich but ate it along side mashed potatoes and veggies. It was so moist you didn't need any type of sauce or gravy. I did however made a change to the recipe. I used italian breadcrumbs. Instead of the sun-dried tomatoes, I added a half of a cup of chopped green and red peppers, and white onion. Delicious! This is a keeper!
