This is the most amazing meatloaf! It keeps well and wonderful hot or cold. The mayonaisse is easy and adds wonderful flavor.

The only thing I would add is chopped basil as I love the combination of basil and sundried tomatoes.

The only 2 changes I made was I used parmesean/romano/asiago blend of cheese. It's what I had and I also toasted the rolls with butter and garlic powder added. The pancetta is delicious. The parchment paper keeps everything moist. Try it you will love it. I am going to trade in my turkey burger recipe for this one. Yum yum.
