    Easy, Moist and Delicious! This loaf brings a whole new dimension to turkey and I'm excited to make it over and over again. As others reviewers mentioned to hold back on the salt due to the pancetta was very appreciated...I added .5 T of salt and 1 T of Italian seasoning bc I doubled the recipe. I also added half and onion and I couldn't bear to stick the turkey loaf in the oven without the sauce so I combined ketchup, honey and a dash of worchestershire sauce to the loaf on top of the pancetta. I didn't try the mayo/arugula dressing since I'm not a big fan of mayo. I accompanied the turkey loaf with Tyler Florence's mashed potatoes and I can't wait to eat the leftovers!

    I am using a lot more ground turkey these days as is so much healthier than beef, however you really have to work to accomplish a delicious flavor that the whole family likes. This recipe was so easy and quick. I added much less salt than called for - just a pinch which was plenty, I also added one sauteed leek (white part only sliced thin in one teaspoon olive oil, added 1/2 of one chopped sweet onion as others had recommended, added 1/3 cup celery that I chopped in small pieces (good way to sneak in the veg for extra nutrition, added 1 teaspoon dried italian seasoning, and substituted jar roasted red peppers (1/3 cup for the sundried tomato as we do not care for those. I also baked the meatloaf in a glass loaf pan - I put 1.5 slices of pancetta on the bottom and 1.5 slices on the top and then covered the pan with a piece of parchment paper. Turned out absolutely delicious! I will be making this again very soon!

    This is my family's new favorite! I don't care for arugula so I used fresh baby spinach and made a sort of honey mustard (mayo, dijon mustard and honey that we love with pretzels and the flavors were just perfect together! I've made this several times and no one seems to tire of it. Thanks for a winner!

    I do not generally follow recipes, but this is one of the few that I look up online. Fantastic meatloaf!!! I add a chopped onion to make it a little moister, and tonight I decided to add some black olives as well. All of my friends that have tried this recipe give a resounding 2 thumbs up!! Try it, you won't be sorry!

    I made this recipe last evening, and it was great. My small grocery store did not carry pancetta, so I used proscuito. I left out the salt in the meatloaf then. This meatloaf was fabulous. I added a bit of extra fresh spinach I had left in a bag to the arugula for the mayo. I just used store bought bakery rolls, no ciabiatta in my stores. Froze the rest as I doubled the recipe as just my husband and myself. Wonderful recipe!!!

    This was the best meatloaf I have ever ate. I made it for my family and everyone loved it. Instead of eating it as a sandwich we had it with a side dish. But today with the left over I'm gonna make it as a sandwich.

    The one thing that I would reccomend is to take note of the thickness (or thinness of the pancetta, mine turned out to be too thick and I wasn't happy with the finished product because it didn't completely crisp up. Also I didn't have parchment paper so I just put it in a roasting pan lined with aluminium foil and kind of layed the pancetta over the top. it tasted really good and everyone liked it. I usually dont change recipes especially the first time around but I used canned dice tomatoes instead of sun dried. The kids didn't like the mayo idea and used ketchup for thier sandwiches. Ok this is officialy my longest recipe review ever! I love Giada's recipes, she never steers me wrong.
