    I have made this recipe several times and my family raves EVERY time. My guess is people who don't like Giada's recipe have never had REAL Italian food. She cooks as they do in Italy, and uses flavors as they do there.

    For real flavor to come through..use REAL Romano not the pre grated stuff. It's not the same.

    Definitley only need half the pancetta.
    Thanks for another GREAT recipe.

    I was starting to get a little nervous about this recipe because of the bad reviews but it was excellent. I mixed it the day before and shaped it with the pancetta before cooking it in the oven. I used half the amount of pancetta and it was perfect. Will definately make again.

    I've made this meatloaf several different times, for sandwiches or mini-meatloaves served with a sun-dried tomato sauce. Each and every time they turned out lovely. Thanks Giada!!

    This meatloaf was so dry and flavorless. I even used Italian bread crumbs to bump up the flavor. Terrible!! Ellie Krieger has a great turkey meatloaf recipe entitled "Mom's Turkey Meatloaf". I will stick to that one instead.

    I was looking for something to make with ground turkey. I ran across this recipe and it was a HIT with the family. Even my 3 year olds ate it. My goal at every meal is to find a dish that my entire family likes. Usually I'm not very successful but this one was a winner! I didn't have pancetta so I substitued bacon. I didn't have sundried tomatoes so I just used some catsup. I also didn't have romano cheese, so I just used parmesan cheese. It was moist and delish. I made the arugula mayo. I loved it. It added a nice freshness to the sandwich. My husband doesn't like mayo so he used a honey chipotle BBQ sauce that I had made the previous night. That too was pretty good. It really brought out the flavors of the bacon. YUMMY! Giada, you always come up with the best ideas! Thank you!

    I made this last night as a Saturday Night Movie Night for my husband and I. We both loved it. It was really easy to make, great flavor and although I despise mayonnaise on it's own, I loved the arugula mayonnaise. I am surprised by the bad reviews, I loved this and am planning on making it again and again. I also think it would make great party food, if you cut your slices in half and put them on mini rolls. I am thinking of making this for my next party.

    i want to make this recipe but need some help.I am allegic to eggs. So does anyone have a idea how i can subsitute that in the meatloaf and also a subsitute for the mayo because of the eggs... It sounds so good i want to try is

    I usually don't like ground turkey because it is too dry. This was wonderful. Great flavor and very moist.

    I just don't understand the bad reviews. This recipe is excellent! I'm not a fan of meatloaf, but this take of a classic conformt dish is fantastic. The other reviewers that gave low ratings must be finicky or didn't know how to prepare this trully simple dish. I faithfully watch Giada's show, prepared many of the recipes and been more than pleased.

    I just finished making this and it's sooo good. Don't really know what people who've given bad reviews for this recipe are talking about--not dry at all and tastes really good. I couldn't get pancetta at my grocery store so I used proscuitto instead. Like what most people have said, the cheese and cured meat add plenty of salt so I skimped on that. I also added onions for extra moisture because I only had lean turkey meat on hand. Also, it is kind of an expensive dish, so definitely not something to make if you're on budget. But overall, really tasty!
