This dressing was very easy to make, and VERY tasty. It has a wonderful balance of flavors - freshness from the rosemary, nice acid from the balsamic and the pancetta makes it really delish and adds a fabulous richness. Definitely a keeper...

This is a delicious. I tossed it with hot pasta, roasted cherry tomatoes, and topped with parmesan. Ohhh, heaven! I would refrigerated mine since it had meat in it. I would think leaving meat out, even with the acid in it, is unsafe. The fat from the pancetta will solidify, but set it out shortly before serving to allow it to come to room temp. Hope this helps.

This was so good and delicious and very easy to make. Highly recommend this, also made parmesan crisps to go on the salad.

OK, I can't attest to how this dressing ships or even as to how long it lasts because it was all eaten within minutes. This is an awesome, simple, homemade dressing. I made it with bacon because that's what I had on hand. I served it on mixed greens with shaved parmesan --- so easy and delicious. How can you ever go wrong with bacon, or its Italian cousin pancetta?

I made this for a salad we served at a birthday party -- very mixed aged group. EVERYONE was crazy about it. I served it similarly to the way another reviewer suggested: mixed baby greens, apples, parmesan shavings, homemade croutons...I can't remember what else -- it's been a while. I was excited when I stumbled over this recipe again because I think I'll do this salad for Thanksgiving dinner. :-

I need a quick vinaigrette for a dinner party (with a vegetarian. Make in 5 min and used on the salad I was serving. Even my vinaigrette-hating husband had seconds. Although the meal was tasty, everyone went back for second and thirds of the salad because of this "amazing dressing"...it was yummy! Next time I will try with the pancetta...

ewwwwwwwwwwwww!!!!!!! The pancetta goes bad. I sent this to my grandma amd after 2 days it became moldy. worst vinaigrette ever
