This dish is amazing and I got so many compliments on it! My family loves fried cauliflower and when they tried it in the spinach they were so impressed. The only thing I would suggest is not to salt the fried veggies too much because the parmesan cheese does some of the salting in itself. Also watch how much dressing you put on the spinach because mine turned out to be drenched. Besides those minor details I would highly recommend making this salad. A perfect and tasty side dish!

Has anyone used any other veggies in this recipe? I was considering artichokes?

Fresh vegetables or any fresh ingredient is ALWAYS worth the money and the only way to go. If you consider you're doing it for your health and taste buds as well as those of your family and friends, its one of the best daily gifts you can give or recieve. Anything canned and sometimes frozen pretty much immediately defeats the purpose, adding uneccesary salt and actually killing the vitamins and minerals that you're eating it for in the first place! Plus, I just watched the rerun of this episode and the theme was "healthier versions of junk food to make at home", not to do this to your veggies everyday. I totally love the idea of baking them by Teresa in TN, too. I think I'll be trying that tonight! Also, if anyone is having problems with the coating during frying, or it takes much longer than anticipated, it means your oil is not hot enough! Everyone's oven/stove is different. (Before adding the food Turn up the heat!!!

Wow, what a great combination of ingredients! Of course, I could eat the broccoli and cauliflower all by themselves, but serving it on the spinach makes me feel not so guilty, and I love the simple lemony dressing. I don't think the parmesan coating is meant to COVER the veggies like a batter, just adds a light crunch. I suspect I'll be making this one again!!

I made this salad using the bag cauliflower and broccoli florets, I tossed the entire bag with 4 eggs instead of 2. Dredged in *gasp* parmesan in the plastic container, fried in olive oil. Used a bag of baby spinich, dressed with the lemon vinageragtte and the family went wild. Nice change of pace.

I made this for myself and a friend after a hard saturday of painting. It was very easy to make. We still felt like we were being healthy but a little bad too. Isn't that what life is all about? We can't always be perfect!

I love Giada's food. I have all her cookbooks and recipes from her shows, and they usually turn out great. This recipe though was terrible. It requires a lot of expensive food, fresh vegetables, high grade parmesan and the olive oil. I had followed the recipe verbatum and as soon as I put the vegetables into the oil the cheese fell off. The concept was great but the results were just aweful, such a waste of time and money. I do not recommend anyone to even attempting this.

OH my GOSH this was GOOD!!! The only thing was for me, it was not ..FAST. Took forever to fry up everything, clean the spinach cut up the veggies etc. I have no idea what that poster meant about lemon not going with it, it ROCKS! THAT is what brings it all together. And that poster also said something it not being healthy because it was fried, #1 there is no breading, just a light coating of parm cheese #2 it's fried in OLIVE OIL which is HEALTHY oil. I LOVE this recipe!!!! LOVE LOVE LOVE LOVE!!! THANK YOU!

This doesn't make a lot of sense, particularly in a program about food that won't weigh you down. It takes healthy veggies and destroys them leaving you with a finished product that is not only far less healthy, but also isn't particularly tasty. Why not replace the cauliflower and broccoli with chicken wings and funnel cake and be done with it?

Also, I don't get how these two things go together - super lemony vinaigrette and raw salad topped with parmesan-coated fried veggies. I've been pondering this recipe for the logic for about 20 minutes and the whole thing still makes zero sense to me.
