    Dressing was MUCH too lemony, and And we couldn't get the eggs to stick to the vegies - so the parm. cheese wouldn't stick either and became a gloppy mess. After frying - they didn't have a deep fat fried crisp. Just disappointing all round.

    That is the most wonderful salad that I have ever eaten. What made it was the lemon and olive oil vinaigrette, it pulled all the flavors together!!!

    Let me be honest... I'm in love with Giada and think everything she makes is tasty. With that out of the way, this is the best salad recipe ever in the history of earth. I made it for a friend of mine and she didn't want anything fried. We're training for a 5k and trying to eat "healthy." So... I was driving around town today and thought, "ohh, I could bake the veggies." It worked! I followed the directions from Teresa in Tennessee and it totally worked and was amazing. Now if we can work on that whole training for the 5k thing, we'll be in great shape.

    I saw Giada make this recipe on Food Network and thought it would be great with planked salmon. My significant other and I came in from an afternoon of working at the barn and wanted something light. I made this recipe because it was quick and easy. I followed the directions for preparing the veggies for cooking. Instead of frying the veggies , I roasted them on a stonewear baking sheet at around 435 degrees, watching them to be sure they didn't burn, around 20 minutes. I also barely sprinkled the roasted veggies with salt and added a small amount of Borsari seasoned sea salt to the dressing. We loved the salad. I'll do this one again soon. I have all of Giada's books and have enjoyed every recipe I've tried and I've tried many of them. my Italian friend eats often with us and recieve nothing but compliments on her recipes.
    An added note. Giada is a beautiful person inside and out. I find it amusing how jealous people are of someone healthy and in shape. As a 50 year old athlete, all I can say is eat healthy and get out and exercise and you too will be proud of how you look. Keep up the good work, Giada! We love your show!

    Hey my mother cant have gluten, but loves fried food. This is an awesome twist on healthy fried food. The veggies stay tender and fresh tasting and the outside is salty and crunchy. And an added plus NO Gluten because you use the parmesan instead of flour. A must try!

    I really don't like eating salads. One change I have made in my life is to eat more vegetables including salad. What a surprise when I came upon this recipe. A friend of mine was over and we had this recipe as an entree. We both loved it so much we went back for seconds. Can't wait to make it again.

    Gialda never lets me down. My husband hates brocolli cooked-can't tand th smell. He loved this and wants to know when I am going to make it again. Thanks G !!
