Made this 3x. The 4 star review is based on the first time when I prepared the recipe exactly as written. Breading mixture: 5+ stars. It's amazing! Pork chops: 3.5 stars bc they were dry.
Next 2 times they weren't dry:
Try 2: Used the same meat as the first time, but brined it in water, brown sugar, salt, & peppercorns for 1 hr before, then prepared the recipe exactly as directed. The meat was much more tender. Meal was outstanding. If you're worried about dryness- definitely make a simple brine from what you have and treat it as a quick marinade- makes a huge difference with pork.
Try 3: Only had chicken breasts. Prepared the breading exactly as called for. Adapted the recipe for chicken a little: I browned it for 2.5 min on each side then baked for 15 min to stop the hot skillet from burning the breading before chicken cooked through. They were succulent-- Most tender chicken I have ever made.
I'll continue to use this breading forever! Advice: Adjust how u cook the meat.

Very good.... no need to really salt the meat prior to the breading... the parm cheese is salty enough. My husband loved this and even my picky 5 year old ate it with our MUCH complaining!! :

LOVE LOVE LOVE, my boyfriend really loved it and asked for me to make it again. Some of the breading came off in the pan but other than that it was so easy and delicious!

I love Giada's recipes and actually seek them out on this and other sites. We tried this tonight following the recipe to a 't', however it didn't quite 'dazzle' us; I was actually a little dissappointed, especially after all the 5 stars reported. I won't be repeating it simply because there are so many other pork recipes to try; more than my lifetime! Still love you Giada!

A stellar dinner choice! Putting the parmesan on before anything else was a little tricky; I would recommend doing the bread crumbs first. My family gobbled it up and we wished we had more!

Had some chops on hand and came to FN lookin' for something tasty to do with them. This was the first recipe that came up and I love GDL so based on the ratings of this recipe, I made them without second thought. All I can say is...Boi am I glad I did! These pork chops were soooo good!! A recipe that satisfies..Thanks Giada! Keep em comin!

I think this recipe is great. I suspect my stovetop just isn't good for preparing meats because I always have trouble. I made 2 of the 4 chops in the pan and they burned on the outside before cooking all the way through. I just wanted to post an alternate cooking method in case anyone else has the same trouble or would like to save a few calories by omitting the olive oil. I placed the other 2 chops in the oven on Pam-sprayed foil at 325 for 1 hour, turning them halfway through and they came out great.
