This was so quick and easy and SO DELICIOUS!! I used what I had in my cabinets - dried herbs, bacon (3 slices, garbanzo beans, 1 Tablespoon of crushed red pepper (we like it zesty! and a cup of whole wheat pasta. Incredible!

I made this tonight and my family loved it. I used Canadian Bacon instead of pancetta (lower fat/cholesterol. It was quick, easy and very tasty. The herbs really put it over the top. Definitely in my dinner rotation.

I think this is great if you follow a couple of the other reviewers suggestions. Cannelini is the correct bean for this soup - hate kidney beans. And, the addition of some fresh spinach is a great idea.

My usually bean-phobic sister loved this recipe : It has a great flavor even with bacon and veg broth substituted. I think I may puree more of the beans next time but that's mostly for family preference. I was looking for ways to get high fiber beans into the dinner rotation and this fit the bill 100%.

This one is a keeper! It also freezes really well and is great for lunches at work.
