This was enjoyed big time by my Italian husband who is very critical about his food. The only addition to this that I made was adding tomatoes to the original recipe with a touch of sugar. Also I used the curley elbows.

This is the recipe from my childhood my great grandma used to make. I've been looking everywhere for something that "hits the spot".
I add collard greens because that's how nona made it and I use vegi stock w/ out the pancetta as we are vegetarian here. A great recipe that is going in the regular rotation along with several other Giadda recipes!

I am a huge fan of the EI. This soup is very easy and so delicious. I made it for the first time and everyone loved it so much, there were no leftovers.

I agree, make sure you use low sodium chicken stock, I didn't. However, this soup is even better the next day. Definitely a repeater in my house.

Delicious, but definitely use low sodium broth because pancetta is already salty, and if you garnish with parmesan cheese, even more salty. It was great!

I tried this recipe despite the fact that 4 out of 5 members of my family dislike kidney beans. I had fresh spinach on hand so I added that for color. Everyone was happy with the flavor--no one complained about the beans! Unfortunately there wasn't any left for the next day. Next time I'll make double.

This has everyone in my family raving - even my super-picky 5-year-old. The fresh herbs added so much flavor! It went together so easily, it's definitely going in the regular rotation.
