    The aroma while roasting the vegetables and while dining was incredible. I substitued asparagus for the carrots due to my husband's taste. This receipe would work with any type of roasted vegetables. Very little oil is used, so the fat content is kept low. I served the leftovers as a cold pasta salad. Another great beautiful option for summer bar-b-ques.

    Don't be intimidated by this healthy dish...it has PLENTY of flavor. If you can cook pasta, cut vegetables, and turn on the oven, then you can make this (as long as you don't fall asleep in the process. Great as a meal or side dish!

    Wow! Is this easy to make or what?!

    The taste reaction I have received from "Eaters" is that this dish is "Excellent!" It's very versatile, too! You can throw some Chicken on top for those meat lovers who just "have" to have some, or leave it as is for those vegitarian friends and family members!

    I'm a college student, and I made this for my family! They have asked me to make it a couple times since.

    I was completely impressed with how quickly the vegetables roasted and slightly carmelized into such delicious goodness. I also added asparagus and garlic cloves to the mix and after eating it the other night, I believe adding some roasted chicken would push the dish over the edge into the repeat menu.

    Your kids will eat their veggies like mine did with this colorful and tasty dish. We all love the light yet flavorful taste with this pasta dish.

    The frangrance of the vegetables cooking in the oven were wonderful. My 16yr old son enjoyed helping cutting the vegetables and mixing the veggies with the oil & herbs. The aroma of the veggies roasting in the oven were nothing like we've experienced before. The herbs were very new to us. My children & I were worried if Dad would like it. He is very picky about trying new things. He's a meat, beans, rice & tortilla man. His motto: If there's no meat - it's not a meal. So I sliced up a smoked sausage and added it to the pasta - he LOVED it. Now he wants me to try it with chicken.
