    This was great! I just made it for myself, the rest of the family hasn't gone vegetarian yet! The tomatoes really make this in my opinion. The caramelization achieved by roasting the vegetables gives them a great flavor and adds more texture to this dish.

    We loved this recipe for its simplicity and versatility. It can be used as a side dish or a main course. I used McCormick italian seasoning and eliminated the tomatos. My family and guests loved it. We will have it often.

    This is a great dish, especially for vegetarians. I used 12 ounces of whole wheat fusilli pasta and added 3 cloves garlic, minced. At the end, I added a few chiffonade of fresh basil leaves. Delicious!

    I have been on this kick of trying new things and this happened to be the first new thing I tired. I think YUM sums up what I want to say about this recipe!

    This dish was so simple to make, and had tons of flavor. Very light and refreshing, a great change from the heavy cream sauces. My kids put a star on this recipe!!
