I've been thinking about making this recipe for a little while and I finally did. I loved it, my husband loved it and my kids ate it too. Definitely kid friendly while still great for adults. The sauce was delicious, much more flavorful that I was expecting. My 18 month old who eats hardly anything put it in her mouth and spit it out and then after processing it decided she liked it and started eating it. We will definitely be having this many times!

I really liked this recipe. I didn't have the onions at the moment, so I substituted with a few shallots, added white wine and minced red bell pepper. Very nice. Highly recommend.

Perfect! Easy and vegetarian and kids love the colors of this dish, the pasta and the cheese!

Nice for adults too and for summer sides.

My 1 year old daughter loves peas and carrots so I was looking for a new way to serve it to her. This was so good, even I had a bowl. And I hate peas and carrots! As an added bonus, it was easy to make and the ingredients were ones I already had in my kitchen. To make it a little easier, I used frozen peas and carrots.

I made this for my nephew's 1st birthday party two years ago and it was a hit. I've made it twice since with the most recent being last night for a Christmas Eve party. I use frozen peas and carrots as opposed to fresh because the carrots take longer to soften than the recipe states.

This is one of my favorite pasta recipes. I don't care much for the mascarpone so I leave that out and add parmesean instead. Sooo good. And sometimes I leave out the carrots or add less because they do take a long time to cook.

Made this today for my mother-in-law, my husband and myself as a lunch dish. Really quick, easy and quite tasty. Next time I'm adding shredded chicken.
    Thank you Giada

This recipe was pretty much easy to make, only a two pot/pan meal. However, the cream cheese was way too promenant in this, and I don't think kids would like it. The mascarpone was good, but the cream cheese wasn't. It was a little better with some parmasean, but I don't think this was a 'great' recipe.

This was a great recipe!! Easy to make, and it did not require crazy unheard of ingrediants. My five year old even eat it, so we will definitely make this dish again! Thank you!!

Amazing and oh so delicious! I love the fact that it is a kid friendly meal, but also tasty enough for adults! The only gripe that I have with the directions is that it took me way longer than 5 minutes to soften the carrots - more like 20 minutes. And I ended up needing to use more than 1/2 cup of stock due to the fact that it reduced so quickly. But the taste was so flavorful that overall I have to give it 5 stars! So good!
