    I LOVED this! I tend to dislike peas and this was so, so good! I used an immersion blender instead of a conventional blender and only had dried basil on hand and it was still delicious!

    Great soup - super simple to make. I am vegetarian so I use veggie stock. I also make it lower in fat by substituting 1% organic milk for the cream. If you do not have basil, then you can just leave it out or add another spice. This is a really versatile soup. Delicious!

    I LOVE this soup! I make it often because it is so simple. Before I blend this with my immersion blender, I remove about 1/4 c of the onions. I add them back after blending. I like having a little something to bite with the soup. I feel the soup is creamy enough after blending that I don't add the cream, either. I also omit the garnish. Well done, Giada. Thanks!

    This is a great soup with great flavor. I found it surprisingly light even with the amount of cream. Definitely will make again and try to make a lighter version.

    Basil with peas is such a delicious, summery combo! I threw in a few extra basil leaves and added extra veggie stock in lieu of the cream and chicken stock to make it vegan. I didn't have any roasted peppers on hand so I added a pinch of red pepper flakes for a little kick. Plopped in some homemade croutons instead of cheese. So yummy!

    Coming from a person who isn't normally a fan of peas or pea soups... This soup is delicious! Light and creamy! The basil really makes a nice pairing with the peas. Fresh and quick!

    Pea and Basil soup is DELICIOUS!!!!! I make it every summer with my mom. Even if you don't like peas you will love this soup!!!!! It is a great light meal. :

    This is such a refreshing soup even in the summer, another great version is to make it dairy free for a lighter fair. That's what I did and it was delicious. Works great both ways. The whole family enjoyed from age 1 to 12 to 40 something...

    I did what a few other reviewers recommended and used lowfat milk, instead of cream. It worked just as well and wasn't quite so heavy. It's a great Spring soup.
