I thought these were really good for a light dessert. I think some ice cream would have definitly made a difference too. My brother thought I should have used a cinnamon flavored cookie for the stuffing but I thought the amaretti was good.

While it wasn't great, it wasn't awful. I used Nilla wafers and ended up LOVING the cookie topping and wishing there was more of it, ratio of peach to topping was HEAVY on the peach. Tasted more like just a baked peach, which is good, but the serving size of even half a peach was a little much and I love sweets.

I have made this many times just as written except instead of topping with whipped cream I used a spoon of lightly sweeeted mascarpone cheese. YUM!

I did this with nectarines and couldn't find Amaretti cookies so used honey graham crackers instead. An excellent, easy, delicious and elegant dessert served with a little vanilla ice cream. Looking forward to experimenting with other stone fruits and cookies! Thanks Giada, you're a star!

I could not find Amaretti cookies, so I thought snickerdoodles would be good... WOW this recipe was amazing. My boyriend actually said I need to make this every night. Place it on a scoop of soft vanilla ice cream... YUMM!!!

I love this dessert, and will definitely try it with pears in the fall. The first time I made it I used amaretti cookies from an Italian market, but in a pinch this time I'm using vanilla wafers spiked with some almond extract (add a little at a time and taste, a little goes a long way, with some whole almonds and 1-2 tbsp butter added to the mixture and all pulsed together in my mini-food processor. It's so easy and quick. I prefer the amaretti cookies but I think this will work out just fine.

This is so simple and so good. I didn't have Amaretti Cookies. So I used this cracker that ls like a graham cracker and it tuned out fabulous . Will make it again
