    This is such a refreshing and healthy salad. I used cilantro (as another reviewer had suggested instead of parsley. I shaved the Pecorino cheese, rather than cutting it into chunks. It was easy and quick to assemble. Definitely a keeper. My only problem is that I have to stop eating it before my guests arrive!!

    I added 1 cup of finely diced celery to it and everyone was crazy about this salad. It's a keeper and great in the summer. As always Giada, you never disappoint us!

    I just recently made this recipe and thought it was great enough to comment on...What a refreshing and clean taste! I couldn't find Pecorino so I used Parmiagno, and substituted cilantro when I realized I didn't have any flat leat Italian parsley, and it still turned out awesome! It is equal parts fresh and clean, as it is crispy and savory with the garlic. Easy to make, colorful, healthy, and tasty..doesn't get much better than that!

    I have made this many times already this summer and it is FANTASTIC! The flavors are great. I like to add the juice of 2 fresh lemons because I love lemon with garlic. I have also used basil in place of rosemary which is great as well. It is also great with feta cheese. This dish is so flexible to so many herbs and cheeses and tastes.

    This recipe is sooo easy and so good! And the ingredients are mostly things you can have on hand to throw this together any time. The only thing I didn't have was fresh rosemary, so I just left it out, and it was still delicious. I also squeezed half a lemon over the salad and thought that really helped brighten the flavors and give it an extra kick. I would definitely recommend this one and have already made it a second time since i first tried it a week ago!
