    I tried this recipe and it was very good. I substituted hot sausage for the meat. It did come out a little dry so I'll adjust the recipe the next time I cook it.

    This dish was extremely tasty and simple to make. My only suggestion is easy on the salt. The panchetta is very salty and the recipe even calls for more than that. Wonderful though despite that.

    my mouth was watering after seeing giada present this dish on television. I was compelled to try it, and was richly rewarded. I had no pancetta so left it out, and used half n half instead of cream -- still delicious. It is as easy as a dish can get, took only as long as it took to cook the penne, and is so tasty. Though I thought it lost too much moisture to be anywhere as good as a leftover, my husband looked forward to the leftovers for days.

    Looked around and had everything but penne. But I had a box of rotini sitting around doing nothing, so I threw them in. Very good. I'm use to eating spaghetti a la carbonara and it's nice to be able to throw any kind of pasta together for a quick lunch. Especially one without the heavy red sauce.

    This dish could not have turned out much better. Undercook the pasta just short of Al dente and let the sauce do the rest. I couldnt locate pancheta with in a 30 minute radius, but thick cut American style bacon did the trick. Served it as a side to Giada's Veal Marsala,... What a 1-2 knock ot meal!
