    Easy to make and good flavor, but I think it next time I'll add some sauted peppers, & mushrooms to make the dish more interesting.

    I know now why this is one of the most popular dishes in Rome. It's beautiful and delicious and so fast and easy. I made this the other night for my husband and myself. We got home late and hadn't eaten dinner, so I made up a batch of Giada's Penne a la Carbonara. It literally took only minutes, and the result was a warm, comforting, satisfying authentic Italian meal. The noodles and the pancetta were done roughly around the same time, so that's basically the time it takes. I actually used whole wheat penne to be healthy, and it was awesome. I did not use a whole pound of pancetta either; I used only six ounces and there was plenty of it in the pasta to give it that nice salty, meaty bite. I also had parsley on hand, but forgot to add it in and it was still delicious, so I'm sure with the parsley it's even better! I usually try to watch cream sauces because they're not as healthy as marinara, but in this dish it was so worth it. Everyone has to try this recipe. You won't find an easier recipe, and the taste is outstanding. But then, I've never had anything of Giada's that wasn't!

    This is outstanding and simple!! Even the kids loved this one. It will be one of our favorite recipes. I added some oinons and garlic to the pancetta while it was cooking. I then deglazed the pan with some pinot gregio and added a few red pepper flakes to kick it up. Wow this was great!

    I normally love all the recipes from Giada that I've tried, however, this one bombed big time. My fiancee and I had to end up ordering pizza. I'm still a huge fan though and will continue trying Giada's recipes but I would recommend skipping this one.

    An easy dish to make and looks very pretty, but too filling. NOTE: Make sure you don't cook the pancetta for too long. I made the mistake of doing that and my whole place got smokey!! Not used to cooking pancetta.

    every italian cook knows that there is no cream in carbonara. also the amount of eggs and pancetta is way too much for one pound of pasta. the result is a salty, watery mess. giada, where in italy did you learn to cook because surely, this is not everyday in my italy.

    My brother made this recipe on his last visit to CT. from FL. We were all in the kitchen and watched the preparation. It was easy and we all enjoyed the meal tremendously!! My boyfriend has been talking about it ever since and I plan on making it this weekend. My mouth is already watering. It's kind of a combo between an Alfredo and a Carbonara sauce; very decadent and rich. Cudo's to Giada!!
