I LOVE this recipe! I saw the episode when she made this, and I knew I had to try it. This has been a hit with my family, as well as my friends. As soon as butternut squash goes out at the grocery store, I snatch up a few and begin making this hearty and delicious meal! I LOVE it!

Very good! I will make again. The tartness of the goat cheese goes well with the sweetness of the squash. I put the roasted onion and squash in the food processor for a whirl and added pasta water then mixed it with the pasta and goat cheese. I omitted the walnuts and it is delish! My husband said he wouldn't change a thing.

Delicious! I used pecans instead of walnuts and forgot to add the parmesan cheese. I will definitely make this again. Next time I might try mashing the squash after roasting it. I found myself doing that on my plate. I liked it better that way!

The goat cheese was a little bit too strong for my taste. It was a lot of pasta! next time I will cut the recipe in half. Overall, it was a good dish.

A great entree for our Meatless Mondays. I cut the recipe in half because I had a 4 oz. herb garlic goat cheese in my freezer I wanted to use up. Roasted the squash and onions on my outdoor grill. Great favors. Very tasty. We will have this one again. Thanks, Giada for another super recipe!

FANTASTIC! I made this a few nights ago and it was simply delicious. I roasted the onions and butternut squash the night before, and then reheated them while the pasta was cooking. The butternut squash definitely cut into the creaminess and richness of the goat cheese, which was lovely! I omitted the walnuts bc I didn't have them on hand, but I bet the dish tastes wonderful with the walnuts! I will absolutely be making this dish again! Thank you, Giada, for another awesome recipe!

I love this dish! What a great fall recipe. My husband does not like goat cheese, so I failed to mention that it was in the dish, and he actually loved it! Definitely recommend this.
