Easy to make and the roasted vegetables were delicious, but I the goat cheese was a bit overwhelming for my taste. I think this is worth a try and do not forget the basil or the toasted walnuts because those both made the dish have more texture.

This dish sounded good to me prior to reading the reviews and after reading just a few I knew I needed to give it a go. I didn't have enough basil so added flat leaf parsley to make it a cup. I also added dried cherries which worked great. I liked the sweet bites paired with the other flavors. Next time I may increase the onion and squash and try a smaller penne not that It needs it but I would like give it a try. I used freshly grated Ramona cheese to garnish. This is a keeper and one you can have fun with by adding your own touch. Try the dried cherries. Definitely a keeper. Thanks, Giada!

Well I would prefer it warmer than I had it, but over all not too bad. Could be my own fault, didnt have ALL correct ingredients so used marscapone, dried basil, garlic powder. Only roasted veggies 1/2 hr turned to mush didnt use nuts (dont like themMaybe the chz difference makes the difference. Will maybe try again.

Awesome recipe. Use more pasta water than you think you will need because it absorbs into everything. Next time, I am going to add dried cranberries to this!

I made this dish this evening, but I did peal and cube butternut squash, too time consuming. Instead i added frozen and cooked butternut squash, and followed the rest of the reciepe. Came out great, well at least I liked it.

I made it last night, didn't add the basil ( we don't like it , added one extra onion . It was so creamy, delicious, fast and easy. Every one in the family loved it. I can't wait to make it again, it is a keeper.

Delicious and easy (other than peeling butternut squash, which is always a pain. I added roasted brussel sprouts as well - very good.
