Penne with Sun-Dried Tomato Pesto

Ingredients
  • 12 ounces penne pasta
  • 1 (8.5-ounce) jar sun-dried tomatoes packed in olive oil
  • 2 garlic cloves
  • Salt and freshly ground black pepper
  • 1 cup (packed) fresh basil leaves
  • 1/2 cup freshly grated Parmesan
Directions

Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.

Meanwhile, blend the sun-dried tomatoes and their oil, garlic, salt and pepper, to taste, and basil in a food processor and blend until the tomatoes are finely chopped. Transfer the tomato mixture to a large bowl. Stir in the Parmesan.

Add the pasta to the pesto and toss to coat, adding enough reserved cooking liquid to moisten. Season the pasta, to taste, with salt and pepper and serve.

This is an elegant dish. Just add a salad, bruschetta, and a great wine to entertain in style. The most ardent meat lovers won't realize they just had a vegetarian dish! For variety this is great with grilled chicken breast, grilled salmon, or a gourmet precooked sausage such as Cantella's. I cut back on the amount of oil, using only 1/4 of the oil in the jar, then adding slightly more to taste. Make sure to set aside at least one cup of the pasta water - it is crucial!!! Also, you cannot use parmesan that comes in a shaker can, use the real thing from a wedge. Reggiano is best and expensive, but any wedge of "parmesan" will make a great dish. This is a super simple and very tasty dish. The one negative is that sun dried tomatoes in olive oil are very expensive, like $7/bottle in California. I googled how to make them. I give it a 3.5, but I guess I am rounding it up to a 4 because they dont let you use halves. I made this and thought it was ok, nothing to really take a picture of and put on instagram lol. I would say its a serviceable meal that you can eat on a lazy wednesday to take to work the next day, but nothing I would cook for a date. Eh, this recipe didn't do it for me. I found it incredibly dry. There wasn't enough oil in the jar of sun-dried tomatoes I used to coat the pasta. The flavor was ok, I would just suggest adding some olive oil to the pesto before coating the pasta. item not reviewed by moderator and published
So easy to make albeit I tweaked a few things: added 1 block of vegetable bouillon, a tablespoon of olive oil and a few drops of water into the food processor. then, added strips of grilled red capsicums (peppers into the pot of cooked penne and pesto mixture. Parmesan was added into each serving dishes/pasta bowls and a dash of Tabasco for myself and for my hubby. I actually added a half cup of regular pesto to this and served with a pesto baked chicken breast and it was perfect! My boyfriend is a big pesto fan and was hesitant about it not being "traditional" but he loved this and it is officially his favorite dish. We had a few friends over as well and everyone was blown away. I knew it was a success when everyone sat around the table silently full and glassy eyed. This recipe was quick and flavorful. I changed a few things based on other reviews: I didn't use all of the oil that was with the tomatoes. I added 1/4 cup of toasted pine nuts and 1/8 tsp. of red pepper flakes to the pesto. Additionally, I added a package of mushrooms that I nuked in the microwave with a little garlic salt and grilled some chicken to up the protein content. Finally, I used whole wheat pasta just as a personal preference. This dish was so quick, easy and tasty! I would add a little more of the oil next time and make sure I give the pesto enough of the pasta water to really come together. I thought it was a little dry, but that was my own fault. I loved this recipe! However, the first time I made it, I made several of my own twists to the recipe itself. I found that adding more basil (1/2 C. more, feta cheese, goat cheese, along with sauteed mushrooms, red/green peppers, and black olives, and scallions/green onions, and 1-2 tsp. of Italian seasoning (and slightly more liquid - reserve 1 1/2 C. of the cooked pasta liquid made the dish for me. Loved the combination of flavors and how versatile it is. I've added cream to it, used it in deviled eggs, chicken, fish, etc... I added marintated artichoke hearts to make the flavor more complex.
