These are my husband's favorite cookie so I wanted to try this recipe. He thought they were too crispy and a little bland. I did do some research for other recipe's and I see that a lot of people use almond paste instead of fennel. This will not be a keeper.

Turned out wonderful...the pine nuts were slightly toasted and the fennel taste was outstanding. Would not find ground fennel, so got out the mortal and pestal and ground the fennel which makes the cookies even better when you do it all by hand. Will try these out with guests this weekend

I've made these cookies several times for guests, and for my husband and I. They are delicious and extremely easy to make.

These were great! They tasted just like Pizzelle's. I only ever made Pizzelle's around Christmas, but these simple Pine Nut cookies are easy to make for whenever! Wonderful

My sister and I tried this recipe while I was visiting for the holidays. It is very unique and very tasty. I agree with previous comments, though, that additional fennel seed should be added. We used one tablespoon. We will both be making this cookie again. Thank you for the wonderful recipes.

This cookie was very good. I love the fact that the dough can be frozen and then cooked again later.
    Thank you Giada!
