For Linda, who thought a step was omitted, the recipe does not make clear you need to add the simple syrup, slowly, while it is still warm, so it cooks the egg whites.

This sounded so good, but it was very icy. I think they omitted a step from the recipe, normally in a semifreddo the egg whites are whipped over a double boiler, this was not. Also it supposedly gets less icy if you only whip the cream to soft peaks (not stiff.

Delicious frozen dessert. I make a similar refrigerated dessert - Macaroon Torte. Very similar ingredients including crushed pineapple but also add 1 sm. box dissolved lemon jello. My recipe uses macaroon cookies which would be good on the Semifreddo, too. Delish....a family favorite.

I served this for dessert on New Year's Eve. Everyone liked it because it was light. I'm thinking about making the simple syrup using the pineapple juice instead of the water for more pineapple taste next week when I prepare it for my Bunco group.

We are experimenting with recipes for a dinner party we are doing during the holidays. Thought this could have been creamier - seemed almost too "fluffy". It had a nice flavor but we were disappointed.

This recipe was so good that I took it to work to share. Knew if I didn't, I'd eat the whole thing myself! Everyone at worked loved it too! Added peacans to the recipe for a little crunch. It was a great cool treat on a hot day.

I made this with pineapple and mandarin orange can with graham cracker pie shell. It looks pretty because of yellow and orange colors. I made shell also and sprinkle with left-over crumbs of graham cracker. It was great fun to make with kids and they loved it. For me, it was little sweeter. Next time I will try with chocolate wafers shell so that I can have little rich bitterness go with the original sweetness!
