    What is there to say? This meal was delicious. Instead of the pork I chose to use chicken. I find that the chicken browns nicer and cooks quicker. Rather then cut a slit into in, I pound the chicken out (1/4 inch and roll it with the mixture. I secure it with kitchen twine and refridgerate for 40 minutes. Then I cook it.

    So good...Great for entertaining.

    I made this last night for my family. My husband and I agreed that this is a dish that will be placed in our rotation of weekly meals. My four year old even ate some and that speaks volumes.

    I'm making this for my second time tonight. I substitute the goat cheese for more readily available cheeses, and leave the dijon mustard out, but it's still a wonderful fresh flavor. I am going to try to see if making a smaller cut into the chops will keep more stuffing in this time.

    Explosion of flavor. I made this recipe exactly except I pan fried boneless chicken breasts in olive oil and put the spinach/sundried tomato mixture on top of them and then spooned the sauce over it. I was going to roll the breasts up with the stuffing inside but it took less time to just cook them while I was making the topping. It was sooooo good but you must like goat cheese. It reminded me of Chicken Bryan from Carrabbas. I will definitely make this again.

    I substitued the goat cheese for ricotta. Delicious! Very simple to make. Guests were very pleased! So good!

    This took me about 1.5 hours. Pork Chops that are 1 inch thick can not cook fully in 8 mins. It was not worth the effort and the mess.

    I made this at my in-law's house over the weekend, and the whole family LOVED it. There wasn't a single sharp knife in the entire kitchen (my in-laws never cook so I just spooned the stuffing on top of the pork chop, after spooning the sauce on it. Not exactly pretty, but effective. So if you have trouble stuffing the chop, that's an option. Also, the stuffing is delicious by itself (my brother in law was licking the bowl, and would be an awesome spread on top of crackers.

    This was a big hit! I substituted cottage cheese for the cream cheese and kale for the spinach because it's what I had on hand and it was still delicious.
