    I was skeptical about using frozen spinach but it turned out GREAT! This recipe is going in my keepers. The lemon mustard sauce is fabulous and can be used on plain pork chops. Thanks Giada!

    My 5-year-old daughter loves to watch FoodNetwork with me. We just happened to be watching your show and saw you preparing these pork chops. My daughter Ava told me they look "amazing" and asked if we could make them for dinner. She helped me make them and they turned out to be a HUGE hit with the family. I wouldn't change a thing about the recipe. Perfecto.

    I saw this episope a few weeks back and I new I had to try it. My pork chops always come out dry so I was anxious to try out a new way to cook them. I made it last night and can't wait to go home and have the left overs! I wasn't so sure how the goat cheese would taste but I didn't think it was that bad. My boyfriend on the other hand didn't like it so I'll have to find a subsitute. The four minute cooking time on both sides did have the pork chops nice and golden but they still weren't cooked all the way through. I ended up putting them in the oven with the chicken broth for about 10- 15 mins on bake (325 degrees and it was fantastic! I'll defintely be making this again!!

    The ONLY downside to this is that I am such a slow poke in the kitchen, this recipe was delicious! The sauce gave it such a great flavor. My husband ranked it number 1, will definitely make this one again!

    This was the first time I was able to make chops without brining, that came out moist and so delicious. I did not have sun dried tomatoes, so I used a fresh tomatoes diced. Made this last week and plan on making them again today. Leftovers were also still delicious the next day!

    I will make this recipe again, but will leave out the sun-dried tomatoes, which I think detracted from the flavor. And I'd probably use full-fat cream cheese in the stuffing, and add Madeira to the sauce.

    If you've never quite found the secret to delicious pork chops, this is it! Fantastic recipe and easy and fun to make. Easy to scale down if you are just cooking for two. Impress your friends and loved ones. The goat cheese, cream cheese, sun-dried tomatoes, spinach and garlic make great friends in the middle, the lemon and dijon pan sauce as a hot finish is brilliant. I added just a bit of cornstarch and water to thicken the pan sauce enough to keep it from running on the plate. Saute some fresh green beans with a little olive oil and hot sesame oil, pair with a salad and it is close to heaven. Marc--Tiburon

    I found this easy to make and great tasting. Yes I did have left over filling and wonder if I could freeze it for future use?
    After browning the chops I turned the heat down to low until they finished cooking and they turned out moist and delicious.
