This dish was very flavorful and easy to make. I might finish the chops in the oven next time as they were still a little pink in the middle, but a bit tough on the outside. Overall very tasty!
Just an idea too - the recipe might also be great for chicken!!! :

This recipe takes alittle time but it is soooo worth it! I used sun dried tomato pesto instead because I couldnt find the whole tomatoes but it turned out delicious! Just be sure not to stuff your pork chops too much because the filling began to ooze out as I was cooking it. However, still an excellant recipe that you must try!

I love this recipe for pork chops! This is one of the first recipes of Giada's that I found to be easy to follow (I'm a novice in the kitchen. My husband doesn't have the palate for the flavors of the stuffing but he did say he looks forward to having this again with the searing sauce. Perhaps I'll save this recipe for when we have guests and make some with stuffing and some without.

This sounded so good on the show I decided to splurge and purchase more ingrediants for dinner than we usually budget and it was not worth the money. I followed the recipe and directions exactly and the spinach was really overpowering and the sauce was terrible. We threw most of this meal out and had to scour the kitchen to find something else to eat.

I made this dinner for my husband and myself last week. I had never used goat cheese in any recipe before and was pleasantly surprised by the taste. I liked the pork chops with and without the sauce equally. This is a really delicious recipe.

I saw Giada prepare this on TV. It took me quite a bit longer than her, but it was worth it in the end. On a side note, I didn't end up using all of the spinach dip that the recipe called for. I'm happy that I anticipated this and made sure to spoon enough of it into a separate bowl before using my fork to take some from the bowl to the raw pork chops. I had a good amount of "un-tainted" spinach dip to spread over rolls and crackers later on!

My mouth watered when I watched Giada make this. All the flavors screamed out "cook me!" I did substitute feta for the goat cheese; although I do not believe for a moment it would be any less fabulous with goat chese. Giada, thank you! Your recipes never disappoint! I looked like a superstar.

I didn't have goat cheese or sun dried tomatoes, so I used a bit more cream cheese and added a small amount of blue cheese instead. Paired with the lemon mustard sauce, it was wonderful. This recipe was easy to make and very good served with mushroom parmesean risotto.
