This recipe was soooo good. I used Feta cheese instead of goat cheese and because I read the reviews I browned the pork chops and made the sauce and put some of the sauce over the chops and put in the oven for approx. 20 min. Used more sauce when I served. I used pork loin and it was nice a juicy and flavorful. I will use the extra stuffing for chicken breasts tomorrow. Thank for the great recipe.

This is now one of my favorite recipes. It's so simple to prepare, but it looks and tastes like I slaved all day in the kitchen.

Wow! I was never a big fan of pork chops before this recipe... My whole family loves this dish - even my picky 4 year old! I do change out sun dried tomatoes with just one big ripe tomato (like a beefsteak tomato since most my family don't like dried tomatoes.... It is so yummy... I make this dish about once a week now!

I never would have made something with goat cheese or sun-dried tomatoes, as I am a beginner cook. Normally boneless skinless chicken can be really bland, so I decided to try this as a substitute to pork since we don't like pork. It was fabulous! The flavors were great - not overwhelming for me (I'm a picky eater and a thumbs-up from the husband. I only had 3 chicken breasts and definitely a little too much filling but what fell out was in the sauce so it was still good. It definitely took a lot longer to cook but I think part of that was being thicker chicken breasts. This is a relatively easy dish but the taste is definitely restaurant quality!! I am looking forward to making it when my parents or the in-laws visit. It tasted just as good as leftovers the next day, too.

I made this for my husband the other night and he couldn't get enough of it. Neither could I! I having some more stuffing left over and I am going to make it for my brother next. Just delicious.

I used a 10 oz. bag of fresh spinach and steamed it in the microwave instead of using frozen. Then proceeded with the rest of the ingredients as listed. After cooking 4 minutes on one side I flipped the chops over and put in a 375 degree oven for 10 min. After they rested while sauce was being prepared, they were perfectly done. I thought the sauce was delicious. Make sure your meat is at room temp. Makes all the difference.

The filling was too rich for my tastes. However, I did try the filling as a cracker spread and it was tasty as an appetizer.

I made this recipe and DH and I really liked! It was a bit messy to cook since the stuffing was falling out, but love the taste of the spinach and goat cheese!. However, I am going to omitt the gravy as I don't think it really adds to the dish.
