    My family loved these pork chops. I am not a fan of sauces but this one is light and really balances well with the richness of the cheese. There are two changes I'm going to make when we have them again. One is to use six or eight pork chops instead of four. The stuffing is really rich and goes a long way. Another is that after I make the sauce I'm going to stick the pork chops back in the pan for another minute or so. Mine wern't cooked all the way through with four minutes on each side and they taste so much better really hot. Thank you Giada for this recipe... soooo good and so easy to make.

    I love your recipes but this one was a bust. A center cut pork chop is just too lean to be juicy. I loved the stuffing and next time I will stuff a pork tenderloin.

    I love Giada's recipes..but this one was awful. The cheese (especially the goat was so overwelming that you tasted nothing else. The method of cooking was not the best either as the styffing was lukewarm. It might have been a little better if pan seared and then finished in the oven. Would not make again and my family agrees!!

    I am an avid cook/baker, but this recipe won't be tried again at our home!
    I bought good quality center cut pork and it still didn't make the grade. For starters, the pork didn't get cooked through...it really needs more time or perhaps some "oven finishing." Additionally, it took WAY too much prep time-who has that kind of time??? I'm all for simple and tasty and this one just did NOT work for our family. Bummer.

    This recipe was easy and delicious. The only caution I have is that you might have to cook the pork chops a little longer than Giada did.
    I can't wait to make this again!

    Another great recipe by Giada - I agree with the other reviewers that it takes a little longer to cook the pork chops -one suggestion is to add them to the sauce after it has reduced for about five minutes and cook them in the sauce for the last five minutes. Also, to cut the lemon flavor of the sauce, I used only half of the lemon and added about a tablespoon of the dijon mustard for a more dijon taste. but the spinach is mixture is very tasty!!

    The stuffing for the porkchops is wonderful! This will definitley be a repeated recipe for me. The pan sauce with lemon and dijon is very interesting and delicious as well.

    the stuffing and sauce was delicious, but i had to cut the chops into pieces for the meat to cook all the way through without burning, and that is after cooking for about 8 minutes on each side. this honestly kind of defeats the purpose of stuffing the chops.... right? i think i will use thinner chops and just use the stuffing as a topping next time. it did taste great!

    Had feta so substituted it for the goat cheese and it was really great. The sauce is wonderful. Cut in half to serve two and had some filling left which I put in an omelet the next morning, it was delicious there also.
