I made this last night for my wife. Wonderful!! The sauce was delicious, the pork chops were delicious and the combination of the apples and pancetta made this a dish that I would serve again and again.

I don't make a lot of pork dishes, so wanted to try some new recipes. This was delicious. The pork chops stayed moist and the sauce was yummy.

Delicious! The play with salty and sweet was just an explosion of flavors in your mouth! Looove the sweetness of the apples, and the saltiness of the bacon combined. A keeper!

This recipe was so so. The sauce was tasty but we were surprised at the lack of apple flavor. If I make this again, I would add cslvados brandy as another reviewer suggested. I would also cut down on the onion. The pork was very tender but the taste needed to have more oomph

Great flavor, the chops were very tender. Did a light whipping cream and turned out fine. The family loved it. This is a keeper!

good flavor...a bit creamy. I didn't have brandy so I used a splash of red wine. I don't think it changed the flovor composition much. My husband actually commented on liking the sauce ( he doesn't like pork chops but these he thought were good. Pork cooks really quickly so becareful of over cooking.

So little effort for such a decadent dish. I made this to recipe with the exception of using Seasonello in place of plain salt and pepper on the chops. Seasonello is an italian seasoning that contains salt, pepper, rosemary, garlic and sage. Since I had introduced a bit of rosemary on the chops, I added 1 long sprig of rosemary, quartered, to the sauce as it simmered. Rosemary blended so well with all of the flavours. Additionally, I needed to cook the apples about 15 minutes, rather than the 5 suggested to get the browning I desired.
When the chops had cooked, I took them out and thickened the sauce so that it was more creamy. So sublime spooned over the chops. This is a spectacular recipe that really reflects italian and french country cooking. I will absolutely make this again!
